Gout and low-carbohydrate eating: be cautious in the first weeks
Gout is the only situation in the joint-health field where the method requires caution at the start. Not because “meat is harmful,” but because ketones and uric acid are excreted by the kidneys through the same pathway, and uric acid may rise during the first two to four weeks. What really drives gout
Uric acid is a breakdown product of purines, and meat was blamed for years. Data from the past twenty years shows that the main drivers are fructose (sugar, juices, honey, sweet drinks), alcohol, especially beer, and insulin resistance, which prevents the kidneys from excreting acid. Meat and fish rank third, and even then it is organ meats and seafood, not steak. In the long term, low-carbohydrate eating removes the first and third factors, and uric acid falls in most people within 3–6 months.

What is allowed and what is not
Allowed: meat and poultry in regular portions, eggs, cheese, vegetables, avocado, nuts, coffee — it lowers uric acid, and cherries and berries in moderate amounts. Limit during the first months: liver, kidneys, sardines, anchovies, mussels, and more than 150 g of red meat per day. Not allowed: beer, spirits, sugar, juices, honey, or fructose in any form. Fasting longer than 16 hours at the start — no: the deficit raises uric acid. Water with salt during the fasting interval is essential.

Yes. A portion of 100–150 g of meat or poultry twice a day is fine. The problem is organ meats, beer, and sugar.
Coffee with gout?
