How to Start Intermittent Fasting: From 12/12 to 16/8 in Three Weeks
Starting intermittent fasting with 16/8 on the very first day is the most common way to give it up. There is another effective approach: three weeks, one hour at a time, moving from a regular day to an 8-10-hour eating window. There is almost no hunger because the body has time to adapt rather than resist.
12/12: close the kitchen after dinner
Nothing changes, we simply put away food after the last meal and skip snacks between meals. The 12-hour break accumulates naturally through sleep.
14/10: move the first meal two hours later
Water, coffee, and a pinch of salt get you through the morning. Three meals within 10 hours—that is already the basic regimen from Anastasia's method.
16/8: another hour or two, if it feels easy
We add an hour at a time when the previous step no longer feels noticeable. If 14/10 is comfortable but 16/8 isn't, we stay at 14/10. This is also a full-fledged regimen.
Why you shouldn't start with 16/8 right away?
The body is used to receiving food at certain times, and the hunger hormone ghrelin is released in advance, “according to schedule.” If you suddenly skip breakfast, ghrelin will arrive at its usual time during the first few days and demand its share. After a few days, the schedule adjusts, but many people do not make it that far — they give up on the third day.
According to Johns Hopkins Medicine, the body needs 2-4 weeks to get used to a new eating schedule: during this time, hunger, irritability, and reduced concentration are possible. A gradual start stretches the adaptation over the same number of weeks, but makes each step small. In Anastasia’s method, the rule sounds like this: “start gradually so that the body does not experience stress.”
The second argument is low-carbohydrate eating. If you eliminate sugar and narrow the window at the same time, the body undergoes two adjustments at once, and keto flu compounds the hunger. It is better to do one thing first, then the other.

Step one: snacking, not the window
The most significant change in the first week is not the length of the pause, but the absence of snacking within the window. Three meals instead of six or seven “trips to the refrigerator” lower insulin for much of the day on their own and teach the body to function between meals. Without this step, the window makes no sense: you can eat small portions for 8 hours straight and get nothing out of it.
The rule from the method sounds strict: no snacking, with the entire diet consumed in two or three meals until comfortably full. In practice, this means that each meal must be substantial — eliminating snacks is only possible when the main meals are filling.

How do you know you can take the next step?
There is one sign: you no longer notice the current schedule. You do not think about food before your first meal, the morning passes with water and coffee, and by the first meal you feel normal appetite rather than “ravenous hunger.” If this happens for three days in a row, shift it by another hour.
If the opposite is true—you approach your first meal trembling, start snacking uncontrollably, or overeat at the first meal—the step was too big. Go back one hour and stay there for a week. This is not a setback, but a normal adjustment.

Hunger that arrives on schedule comes in a wave for 20-30 minutes. If during this time you are on the road or at work, it passes unnoticed.
One change at a time
Don’t combine starting your fasting window with giving up sugar, new workouts, and lack of sleep. The body can handle one adjustment, not three.
Be prepared for your mood to drop and apathy to set in for a few days. This is the body's temporary resistance; it will pass.
What’s inside the window as it gets shorter
The window gets shorter — portions don’t get smaller. This is the main rule of the three weeks. If you have removed snacks and breakfast, all the food from them should move into the remaining meals; otherwise, you’ll end up with a deficit you didn’t ask for and fatigue in the second week.
The guideline from the method: half the plate is vegetables, a quarter is protein, a quarter is fats, and 100-130 г of protein-rich food per meal. Every day, have a large bowl of green salad, 300 г.
