Sugar swings: why you are hungry again two hours after eating

What causes the crash
Below your starting blood sugar is not just “a little hungry.” The brain, which runs on glucose, sees the drop as a threat: adrenaline and cortisol, trembling, sweating, irritability, inability to concentrate, and a craving specifically for something fast—sugar. For some people, this is reactive hypoglycemia, with readings below 3.9. Hence “I can’t go without snacks” and “I’m mean when I’m hungry”—it is not your character, but the amplitude of the swings.

How to get off the swings
Remove what makes them swing: sugar, flour, grains, potatoes, juices, and large amounts of fruit. Keep what creates a flat curve: protein, fats, and vegetables. If there are carbohydrates on the plate, eat vegetables and protein first and carbohydrates last: the peak is 30–40% lower; this has been measured. A 15-minute walk after eating allows muscles to take up sugar without insulin, reducing the peak by 20–30%.
